Who says we have to sacrifice healthful ingredients just so something can be called a "real" dessert? These energy bites are chock full of nutrient-dense ingredients and are SO delicious, they could totally pass as dessert....and they definitely have enough calories to qualify...
Truth is, these babies are NOT low-calorie. BUT, the fact that there are so many calories packed into a tiny ball makes them a great portable snack for anyone on-the-go (just ask Scott - he took a BRICK of these with him on his backpacking trip in Alaska). Calories are essentially energy, hence energy bites!

COCONUT ALMOND ENERGY BITES
1/2 cup unsweetened, shredded coconut
4 scoops protein powder (we use whey)
1/2 cup raw almonds
10-12 medjool dates, pitted
1 tbsp coconut oil, melted
1 tsp almond extract
2 tbsp water
Optional add-ins: chia seeds, flax seeds, dark chocolate chips
In a food processor, blend coconut, protein powder, and almonds until fine.
Add the dates, coconut oil, almond extract, and water and pulse until dough-like consistency is reached.
Transfer to bowl and fold in add-ins, if desired.
Roll or scoop into balls, and enjoy! Makes about 25-30 balls, depending on how often you sample the mixture ;)
