Spice up your life with these protein- & pumpkin-packed muffins. You won't regret it.
KODIAK CAKES PUMPKIN SPICE MUFFINS
2 cups Kodiak Cakes Power Cakes mix
1 banana, mashed or pureed
1/8 cup turbinado sugar
1 cup milk
2 tbsp coconut oil, melted
3/4 cup canned pumpkin
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp ginger
Optional add-ins: chopped walnuts, dark chocolate chips
Preheat oven to 350F. Line muffin pan.
Mix all ingredients in a large bowl; fold in optional add-ins, if desired.
Spoon batter into muffin cups; bake for 20-25 minutes on the center-rack, or until inserted toothpick comes out clean.
