Thanksgiving is still a whole month away, but that doesn't mean we can't enjoy some pumpkin pie now! Okay, okay, "pumpkin pie" more like...
This oatmeal breakfast is a delicious way to start your morning (it does taste like pumpkin pie, after all). It's packed with all sorts of healthy things like soluble fiber, whole grains, beta-carotene, antioxidants, and it's sweetened with banana rather than sugar!
If you want to mix up your morning routine with a little Fall flavor, try it out! AND if you're in a hurry, you don't even need to bust out the pots and pans. Just mix up everything in a bowl and microwave! How easy it that?
PUMPKIN PIE OATMEAL
1/2 cup rolled oats
1/2 cup milk of choice (or water)
1 banana, mashed
2 tsp cinnamon
1/8 tsp cloves
1/8 tsp nutmeg
1 tsp chia seeds
1/2 cup canned pumpkin
Optional: 1/8 cup walnuts
In a small pot, add oats, milk/water, banana, and spices.
Cook on medium-high heat until oatmeal has just thickened.
Turn down heat to medium; add pumpkin and chia, and cooked until warmed through.
Nutritional Information (1 recipe w/ 2% milk): 368 calories, 66g carbs, 6.6g fat, 13g protein
