Let's all just take a moment and give that cinnamon drizzle the attention it deserves.... OK, great. Craving muffins yet???
These muffins are dense but lightly sweet, with a tiny hint of warming spices (nutmeg & allspice, to be exact). And then I went ahead and added dark chocolate chips because why not? (PRO TIP: If you're ever wondering if you should add chocolate chips to your muffin recipe, the answer is ALWAYS yes).
You HAVE to try these muffins. They are the epitome of Fall baking. Seriously. They also kind of taste like cinnamon rolls....and if that doesn't motivate you to bust out your baking moves, then I'm afraid it's a lost cause.
This muffin is begging for a cup of coffee to go along with it.
CINNAMON SPICE PROTEIN MUFFINS
2 cups Kodiak Cake Power Cakes mix
1 cup Greek yogurt
1/2 cup milk of choice
1 banana, mashed
2 tbsp coconut oil, melted
2 tbsp turbinado sugar
1/2 tsp nutmeg
1/2 tsp allspice
Optional: 1/4 cup dark chocolate chips
1 tbsp coconut oil, melted
1 tsp cinnamon
1 tbsp turbinado sugar
Preheat oven to 350F. Line muffin tin.
Add all ingredients, except chocolate chips, to a large bowl and mix until just incorporated.
Fold in dark chocolate chips, if desired.
Bake on center-rack for 22-25 minutes, or until inserted toothpick comes out clean; prepare cinnamon drizzle once muffins have been removed from the oven.
For drizzle: mix coconut oil and cinnamon; spoon a small amount over each muffin and add a tiny pinch of turbinado.
