Sometimes (read: a lot of the time) I don't feel like busting out the pots and pans to create breakfast. Just hand me my coffee. Honestly. I'm fairly certain this is why oatmeal was invented; it's so ridiculously easy to make, and you can customize it however you want.
Excess pumpkin seeds and raisins (from THISgranola recipe) led to this delicious oatmeal creation. It fills you up without weighing you down, and most importantly, it takes less than 5 minutes to make.
PUMPKIN SEED ALMOND BUTTER OATMEAL
1/2 cup quick or rolled oats
1/2 cup water or nonfat milk
2 tsp chia seeds
2 tbsp raw pumpkin seeds/pepitas
2 tbsp raisins (packed)
1 tbsp almond butter
1/2 tsp cinnamon
In a microwave-safe bowl/mason jar/mug/container, mix oats, water, and chia seeds.
Microwave on high for 1 1/2 - 2 minutes. Keep an eye on it around 1 1/2 minutes because it will overflow if it heats quickly.
Mix in pumpkin seeds, raisins, almond butter, and cinnamon.
