Daylight savings threw a wrench in my schedule. Are you also getting up an hour earlier than usual?? Luckily I'm a morning person. I just love how quiet and still the world seems in the early AM.
Now, normally I'd complain about getting less sleep, but I've discovered that waking up an hour early means uninterrupted morning baking time. And this morning, that resulted in these delicious coconut blueberry scones. Nothing says I LOVE CARBS like a fat scone.
I apologize for the dependence on Kodiak Cakes Power Cakes mix lately (kind of....okay, not totally). It just makes baking so easyyy and it also adds a nice protein boost (GAINZ). But if you can't find any/don't have any, you can use any self-rising flour or pancake mix, of course. (Side note: did you know Costco sells giant boxes of Kodiak mix??!! Scott's brother recently gifted me with one. Life-changing stuff, people.).
Anyways, if you too love carbs (who doesn't), make these coconut blueberry scones! They're a little bit coconutty, a little bit sweet, and 100% to die for. They also make the perfect pre-workout snack if you eat two of them. Yes, TWO.
COCONUT BLUEBERRY SCONES
1 1/2 cups Kodiak Cakes Power Cakes mix or other pancake mix (add protein powder if you also like gainz)
1/4 tsp baking powder
2-3 tbsp turbinado sugar
1/4 cup dried, shredded coconut
1/2 cup milk
2 tbsp Greek yogurt
1/2 cup blueberries (frozen or fresh)
Preheat oven to 400F. Line a baking sheet with parchment paper.
In one bowl, mix Kodiak mix, baking powder, turbinado, and coconut.
In a separate small bowl, stir together milk and Greek yogurt.
Add the milk/Greek yogurt and blueberries to the dry mixture and mix until just incorporated; dough will be sticky and a bit of clumpiness is OK - just as long as it's all combined into one ball.
Divide into 8 balls and shape into triangles; arrange evenly on lined pan and bake for 15 minutes.
Nutritional Information (1 scone): 135 calories, 23g carbs, 2.5g fat, 6.3g protein
