Oh, hi again! It's been awhile. Scott and I have been busy gearing up for the American Baseball Coaches Association conference in January (more on that later), and it's left little time for blogging!
I've still managed to get some baking time in though (we need fuel for those brainstorming sessions!), and I've kept track of the awesome recipes to share...starting with these Cinnamon Flax Protein Scones.
I don't really know if they're technically scones because the texture is much chewier and not very crumbly, but I shaped 'em like scones, so that's what we're going to call them. Either way, they're delicious, and each one packs 7 grams of protein! That's pretty awesome for a baked good, if I do say so myself.
Because they're not too crumbly, they travel really well, and I'm planning on making them for our Thanksgiving trip (you should too). Nothing is better than a homemade scone with a cup of overpriced coffee at a jam-packed airport.

Cinnamon Flax Protein Scones
1 1/2 cups Kodiak Cakes Power Cakes Mix*
1/4 tsp baking powder
1/4 cup ground flaxseed
2 tbsp turbinado sugar, or other sweetener
1 1/2 tsp cinnamon
1/2 cup milk of choice
2 tbsp plain Greek yogurt
Preheat oven to 400F. Line a baking sheet with parchment paper.
In one bowl, mix Kodiak mix, baking powder, flaxseed, sugar, and cinnamon. Add Greek yougrt and milk, mixing until just incorporated.
Divide into 8 balls and shape into triangles; arrange evenly on baking sheet.
Bake for 15 minutes.
*can use regular pancake mix, just add protein powder (1 c mix + 2 scoops protein powder)
Nutritional Information (1 scone): 111 calories, 2.3g fat, 16.6g carbs, 6.8g protein
