HAPPY THANKSGIVING! I hope you all have a nice time with family & lots of good food!! I, for one, WILL be having my slice of pumpkin pie. I wait all year for it, and in the meantime try to make due with an overabundance of delicious pumpkin-flavored (but still not pumpkin pie) recipes. Like these Pumpkin Protein Pancakes, for instance.
I'm not going to say that these moist, single-serving pancakes can be a stand-in for pumpkin pie, but they ARE superb. The trick is really in the spices. You can cheat with pumpkin pie spice, but I like to use individual ones to play up certain flavors, depending on what mood I'm in. I use nutmeg, allspice, and a baby bit of cloves in this particular recipe, but each time I try something new. Maybe a little cinnamon next time. That sounds good. Let me know how it is if you try it first.
Maybe I'll have these for breakfast today...as a warm up for pumpkin pie :)
Pumpkin Protein Pancakes
3/8 cups Kodiak Cakes Power Cakes mix*
1 scoop protein powder (I use unflavored whey)
1/8 tsp nutmeg
1/8 tsp allspice
1/2 cup pumpkin puree
Water, as needed, to thin
In a small bowl, mix together Kodiak mix, protein powder, and spices.
Fold in pumpkin puree, and add water slowly until a thick batter is formed.
Cook on medium heat and flip when edges start to cook.
NOTE: These can be a little tricky to flip, so make sure you use a large spatula and avoid making overly large pancakes
*can use regular pancake mix, just add protein powder (1/4 cup mix + 1/2 scoop protein)
