I'm still not over this pumpkin phase. I apologize if you are, but bear with me, because these bites are AWESOME and you should make them. Look - we only get to have pumpkin-themed everything for a few weeks a year! (Because it's not like you can buy canned pumpkin outside of the months of November & December....hah. But who wants a spiced pumpkin treat when it's 75 degress out??).
After muffin recipe on muffin recipe on cake recipe, I was ready for something different (but still pumpkin-themed, mind you). A quick search on Google led me to this horrifying discovery: people were combining pumpkin and peanut butter.
What?! And I thought I was weird. But because I'm all about trying new things, I went experimenting. And guess what? Turns out PB and pumpkin are DELICIOUS. (Although I'm slightly convinced adding chocolate chips makes everything delicious).
After playing around with some ratios, I think I finally found the perfect one! A little peanut-buttery, a little pumpkin-y, and a whole lotta awesome. PLUS these bites are so easy to make - they're NO BAKE! All the joys of eating raw dough, none of the salmonella.
No Bake Pumpkin Peanut Butter Bites
2 1/4 cups quick-rolled oats
1/4 cup ground flax
1/2 tsp cinnamon
1/2 tsp allspice
1/2 cup pumpkin puree
1/4 cup peanut butter
1/4 cup maple syrup
2 tbsp chocolate chips
Mix oats, flax, and spices. Add in pumpkin, peanut butter, syrup, and chocolate chips; combine with spatula until incorporated.
Use hands or scoop to form into small balls. Makes 34 bites. Store in the refrigerator.
Nutritional Information (1 bite): 48 calories, 1.9g fat, 6.5g carbs, 1.3g protein
