Easter is this Sunday! What will you be making for breakfast/brunch?
I like to make Spring-inspired treats -- like these Blueberry Lemon Biscuits! It may be raining outside, but if I stare at the ceiling lights while munching on these lemony biscuits I can almost convince myself actual sunny days are right around the corner. Almost. That Pacific Northwest life, doe. Sigh.
I use the Kodiak Cakes Power mix for the base of these biscuits. Because protein. And because lazy. I can't even type in complete sentences anymore. These biscuits are stupid easy to make. I had the idea and then literally 20 minutes later I had biscuits. Those kind of recipes are the best, don't you agree?
Also, you can stuff your face with these babies because they're only 94 calories PER biscuit, low in fat, and have 6g protein. WIN.
Blueberry Lemon Biscuits
1 1/2 cups Kodiak Cakes Power Cakes mix
1/4 tsp baking powder
2 tbsp turbinado sugar
1/2 cup milk
2 tbsp Greek yogurt
2 tsp lemon extract
1/2 cup blueberries (frozen or fresh)
2 tbsp coconut flakes (optional)
Preheat oven to 400F. Line a baking sheet with parchment paper.
In a medium bowl, mix Kodiak mix, baking powder, turbinado sugar, milk, Greek yogurt, and lemon extract.
Add in blueberries and coconut, if desired; mix until just combined.
The dough will be sticky and a bit of clumpiness is OK - just as long as it holds its shape.
Divide into 8 balls, flatten, and arrange evenly on lined pan. Bake for 12-15 minutes.
