Chocolate Chip Kodiak Cookies

It's no secret how obsessed I am with the Kodiak Cakes Protein Pancakes mix. How they fit 14 grams of protein into one serving without any weird texture things happening is nothing short of magical (and I'm not even sponsored by them to say that butttttt *cough cough* KODIAK CAKES PPL, I will shill for you). I love creating recipes with their mix because it's an easy way to up the protein in baked goods...like in these chocolate chip cookies!
If you don't like chocolate chip cookies there is probably something wrong with you. Who can say no that soft and chewy goodness?? (Unless you like the crunchy ones, in which case, you are dead to me).

Usually my go-to recipes are the Chocolate Chip Oatmeal Bites and the Chickpea Cookie Bars...but, while supremely delicious, they don't really reflect the true essence of a chocolate chip cookie. PROBLEM SOLVED, people.

Get yourself some Kodiak protein mix and whip up these babies. You won't regret it. (You won't regret the macros either).

Chocolate Chip Kodiak Cookies
Makes 30 cookies
Ingredients
2 cups Kodiak Cakes Power Mix
1/2 tsp baking soda
1/4 tsp salt
1 egg
2 tbsp Greek yogurt, plain
1/3 cup honey
1/4 cup coconut oil, melted
1 tsp vanilla
1/4 cup chocolate chips
Directions
Preheat oven to 350F.
In a large bowl, mix together Kodiak mix, baking soda, and salt.
Add egg, yogurt, honey, coconut oil, and vanilla; stir until combined.
Fold in chocolate chips (or place on cookie after you scoop them out).
Using a cookie dough scoop or small spoon, scoop dough onto a baking sheet (they don't spread too much so you don't have to leave too much space between cookies).
Bake for 7-10 minutes.
Nutritional Information (1 cookie): 65 calories, 3g fat, 8g carbs, 2.5g protein
