Are you ready for your life to change in the best way possible? Hold onto your pants, people, because Kodiak Cakes recently released two NEW protein pancake mixes - Dark Chocolate and Peanut Butter!
Of course, the minute I heard this I found an excuse to jet on over to Target to pick up the new flavors (along with approx. 100 other things I didn't really need....Target strikes again). Prepare yourself for a barrage of new Kodiak protein recipes.
All I did for this recipe was take a really simple banana protein muffin recipe I use for the plain mix and sub in the dark chocolate one. At a whopping total of 5 ingredients, these are basically the easiest chocolate muffins ever.
Each one is 115 calories and packs 9 grams of protein. They are low in fat too, not because fat is bad, but because I made these specifically for a pre-run snack. Unless you want to learn the hard way, just avoid fat pre-exercise! Trust me. Not to worry though, the low fat content doesn't mean dry muffins, thanks to the bananas.
First, go to Target and stock up on the new Kodiak mixes, then give this recipe a try. It'll be the best thing you do all week.
Dark Chocolate Banana Protein Muffins
2 cups Dark Chocolate Kodiak Cakes mix
1 scoop unflavored protein powder (I use whey)
3 bananas, mashed well
3/4 cup milk of choice
1 cup nonfat, plain Greek yogurt
Preheat oven to 350F and line a muffin pan or grease well.
In a large bowl, combine Dark Chocolate mix, protein, bananas, milk, and Greek yogurt. Mix well.
Spoon batter into each cup until ~3/4 full.
Bake for 20-25 minutes, or until inserted toothpick comes out clean.
Nutritional Information (1 muffin): 115 calories, 1.6g fat, 18.2g carbs, 9g protein
