Peanut Butter Black Bean Brownies

This "new" recipe may just be our Black Bean Brownies with a peanut butter swirl, but what it lacks in creativity, it makes up for in taste. Like, really makes up for. Fudgy, gooey, peanut buttery, chocolatey goodness. ALSO, 6g protein per piece. Just sayin'.

 

Seriously - salty peanut butter and chocolate are a match made in heaven. My mom didn't really buy much candy for us growing up (thanks, Mom!), but when I did get my hands on a Reese's peanut butter cup, you'd better watch out.

 

Sooo, if you don't like peanut butter and chocolate, 

1. I'm surprised you made it this far down the post

2. Go make the regular black bean brownies, and

3. We can't be friends

 

Off to eat a piece now, kthxbye.

 

 

PEANUT BUTTER BLACK BEAN BROWNIES

 

Ingredients

1 15-oz can black beans, drained

3 tbsp cocoa powder

2 rounded scoops unflavored protein powder

1/4 tsp salt

1/2 tsp baking powder

1 tbsp vanilla

3 tbsp olive oil

1/3 cup maple syrup

1/3 cup peanut butter (softened in microwave if stored in the refrigerator)

 

Directions

Preheat oven to 350F & lightly grease an 8x8 pan with olive or coconut oil.

 

Place all ingredients except the peanut butter into a food processor or high-quality blender, and blend until smooth. (The batter will have a thick-liquid consistency.)

 

Pour batter into the pan. Drizzle peanut butter over batter, moving up/down across the pan. Swirl peanut butter by pulling a knife perpendicular across the peanut butter, about an inch apart. 

 

Bake for 16-20 minutes, or until brownies feel slightly firm to the touch and inserted knife comes out clean. Makes 16 brownies.

 

Nutritional Information (1 brownie): 122 calories, 6g fat, 12g carbs, 6g protein
