TBH, when I was creating the recipe for these, I had NO IDEA they were going to turn out so amazing. I made some healthified oatmeal cookies the day before, but really wanted to up the protein content (so, you know, I could feasibly eat cookies as snacks). They turned out sooo good - I could legit give Lenny & Larry a run for their moneyz. Someone pay me for these plz????
Honestly, they taste like REAL cookies (and I don't say that lightly - I usually compromise a little on taste or texture for healthier ingredients or better macros). Soft, delicious cinnamon oatmeal cookies....and 11g of protein. What else do you need?
CINNAMON OATMEAL PROTEIN COOKIES
1 cup quick oats
1/3 cup Kodiak Cakes Power Cakes mix (or whole wheat flour)
2.5 scoop protein powder (I use unflavored whey)
1 tsp baking powder
2 tsp cinnamon
1/3 cup maple syrup
2 tbsp coconut oil
1/4 cup pumpkin puree (canned or homemade)
Preheat oven to 325F. Line a baking sheet with parchment paper or a silpat mat.
In a large bowl, mix together oats, Kodiak Power Cakes mix (or flour), protein powder, baking powder, and cinnamon.
In a small, microwave-safe bowl, add maple syrup and coconut oil; microwave until coconut oil is melted. Fold in the syrup, coconut oil, and pumpkin puree into the dry ingredients until incorporated.
If the mixture is still warm from the maple syrup/coconut oil, refrigerate for 10-15 minutes. If not, scoop out large spoonfuls onto the lined baking sheet. Wet your hands lightly with water to flatten and shape each scoop into rounds (slightly wet hands prevents the dough from sticking to you!).
Bake for 10-15 minutes, or until cookies feel firm, but not hard to the touch. Allow to cool for 5 minutes on pan before transferring to wire rack to cool completely.
This recipe makes 6 large (3.5" diameter) or 12 medium-sized cookies.
